 Sweet Potato Rosti

Ingredients 

2 sweet potatoes, grated
1/2 onion, diced
4 tbsp of our Green Chilli Jam
4 tbsp cornflour
4 tbsp flour
1 tsp salt
1/2 tsp black pepper 
Olive oil to drizzle

Instructions

  1. Preheat oven to 180C. 
  2. Combine the sweet potato and onion.
  3. Add the jam, cornflour, flour, salt, pepper and mix well.
  4. Place the mix into a large geese proof baking tray or into small individual ones.
  5. Drizzle with olive oil and place in the oven for 45 minutes.
  6. Serve with sliced chilli for extra heat or an extra dollop of our Green Chilli Jam.
