 Prawns in a Sweet Chilli Mayo


200 g prawns, blanched and peeled 
200 ml mayonnaise
100 ml Green Chilli Jam


1/2 red capsicum, chopped finely
2 small Lebanese cucumbers, sliced thinly, long ways


  1. Wash the prawns and pat dry.
  2. In a small bowl, combine the mayonnaise and jam.
  3. Place the mayonnaise mix into small serving dishes and place the 3/4 prawns on top.
  4. Garnish with the chopped capsicum and cucumber.
  5. Serve with a small spoon or fork.
