 Banana macadamia Crusted Chicken Breast


2 large chicken breasts
3 tbsp Turmeric Coconut Banana Chutney
1/2 cup crushed macadamia nuts
1 tsp salt
1/2 tsp pepper 
2 tsp parsley, chopped 
100 ml olive oil


  1. Preheat half the olive oil in a  saucepan on a medium heat.
  2. Preheat the oven to 180C and spread the rest of the olive oil around a baking tray evenly.
  3. Slice each chicken breast in half, season and brown on each side in the saucepan.
  4. Once done place the pieces of chicken on the baking tray.
  5. Combine the chutney, macadamias, parsley, and season with salt and pepper.
  6. Spoon the mixture on each piece of chicken evenly and press/compact it gently down to form a crust.
  7. Bake in the oven for 45 minutes—until the chicken is cooked and the top is golden brown.
  8. Serve with your favourite vegetables.
