Vegetable Red Chilli Muffin

Sweet Chilli Vegetable Muffin


6 eggs, whisked 
1 onion, finely chopped
1 red capsicum, chopped
3 broccoli, chopped
3 carrots, grated
200 g cheddar cheese, grated
1 tsp salt
1/2 tsp pepper
200 ml Red Chilli Jam


  1. Preheat the oven at 160C.
  2. Grease a muffin tray.
  3. Combine all the ingredients (except the jam) in a large mixing bowl.
  4. Spoon the ingredients in the muffin tray and add a dollop of jam on top of each muffin.
  5. Place in the oven and bake for 40 minutes.
  6. Serve hot or cold.
