500 g chicken mince
1 head of cos lettuce, leaves separated, washed and patted dry
200 g red capsicum, sliced thinly long ways
300 g sliced cucumbers, sliced thinly long ways
2 tsp of our Spicy Chicken Seasoning
50 ml olive oil
2 red chillies, seeded and chopped
1 garlic clove, chopped
3 sprigs of spring onions, sliced
1 tsp salt
1/2 tsp pepper
1/2 lemon, squeeze
Preheat the oil in a pan on a medium heat.
Add the garlic, stir continuously until slightly brown—add the chillies and continue to stir for two minutes.
- Combine the chicken, seasoning, salt, pepper and stir continuously until the chicken is cooked.
Add the spring onions, mix in well and then take the pan off the heat and allow to cool.
Place the lettuce around a plate, top with the chicken mixture and then place the capsicum and cucumber to the side.
Serve with a squeeze of lemon and enjoy.
