Spicy Cauliflower Rice

 Spicy Cauliflower Rice


100 ml 
1 cauliflower head, grated
1 garlic clove, chopped
5 sprigs spring onion, sliced
1 red capsicum, chopped
1 green chilli, seeded and chopped
2 tbsp Mexican Seasoning


Chopped spring onion and chillies 


  1. Preheat the vegetable oil in a wok on a medium high temperature.
  2. Add all the vegetables except the cauliflower—fry for 5 minutes while stirring continuously. Then add the seasoning, stir and cook for further 2 minutes.
  3. Add the cauliflower and cook for 15 minutes.
  4. Serve hot with a sprinkle of chopped spring onion and chillies.
