Ingredients
100 ml 1 cauliflower head, grated 1 garlic clove, chopped 5 sprigs spring onion, sliced 1 red capsicum, chopped 1 green chilli, seeded and chopped 2 tbsp Mexican Seasoning

Chopped spring onion and chillies
Instructions
- Preheat the vegetable oil in a wok on a medium high temperature.
- Add all the vegetables except the cauliflower—fry for 5 minutes while stirring continuously. Then add the seasoning, stir and cook for further 2 minutes.
- Add the cauliflower and cook for 15 minutes.
- Serve hot with a sprinkle of chopped spring onion and chillies.
