 Cos Leaf Beef Parcels


500 g beef mince

3 tbsp of our Mexican Seasoning

2 sprigs spring onion, sliced

2 garlic cloves, chopped 

2 Bishop chilli, seeded and sliced 

1 red capsicum, diced

50 ml vegetable oil

1 tsp salt 

1/2 tsp pepper 


  1. Preheat the oil in a wok on a medium heat. 
  2. Add the garlic and onions, cook until they start browning.
  3. Then add the capsicum and chilli - cook for 5 minutes.
  4. Combine the mince, break up, stir continuously until cooked through.
  5. Add the seasoning, salt and pepper - cook on a low heat for 5-10 minutes—set aside to cool.
  6. Serve warm in a lettuce shell with a dollop of our Tomato Chipotle Salsa
