 Bobotie - South African Meat Loaf

Ingredients

2 tbsp vegetable oil
2 medium onions, chopped
500 g beef mince
1 cup milk
2 slices of crustless white bread 
200 ml Spiced Pear Chutney
½ tbsp curry powder
1 tsp salt
1/2 tsp black pepper
1 large egg
1 pinch salt
1 bay leaf

Instructions

  1. Preheat oven to 175C. 
  2. Grease 10 cm deep baking dish.
  3. Preheat the oil in a large pan on a medium high heat. 
  4. Cook the onions until translucent. 
  5. Add the mince, break down and cook until brown.
  6. Place the milk in a bowl and soak the bread in the milk. Squeeze the excess milk from the bread and set the milk aside. 
  7. Add the bread to the mince mixture. 
  8. Combine the chutney, curry powder, salt, and black pepper. 
  9. Pour the mixture into the baking dish.
  10. Bake for 1 hour.
  11. While the Bobotie bakes, whisk together the milk, egg, and a pinch of salt. 
  12. Pour over top of the dish and place the bay leaf on tope of the milk.
  13. Put the Bobotie back in the oven until the top is golden brown
  14. Slice and serve.
