Ingredients
500 g pork loin, diced 2 tsp olive oil 1 cup red onion, chopped 2 garlic cloves, chopped 2 cups of potatoes, cut into 1 cm cubes 1 jar Tomato Chutney 1/4 cup coriander, chopped 1/4 cup queso fresco (Cuban cheese) or cottage cheese
Instructions

Heat olive oil over medium heat in a large skillet; add onions, garlic and sauté for about 5 min.

Add the pork, stir frequently until browned on all sides.
- Add potatoes and chutney - stir and cook 20 minutes.

Combine the coriander and cheese.
- Serve in a bowl with crusty bread.
