Ingredients
8 slices bruschetta 2 cups fresh cherry tomatoes, halved 2 small garlic cloves, minced 2 tsp olive oil 100 ml Balsamic Glaze 150 g fresh mozzarella crumbled Salt and cracked pepper to taste
Instructions
- Preheat oven to 180C.
- Slice bread into thin slices and place on a baking sheet.

Brush the tops of each slice with olive oil and bake for 10 minutes and remove from oven.
- In a bowl, toss together the tomatoes, garlic, olive oil and Balsamic Glaze.

Place the toasted bruschetta on a serving plate—sprinkle with the crumbled mozzarella, then tomatoes and season with salt and cracked pepper.
- Serve and enjoy.
