Balsamic Tomato Mozzarella on Toasted Bruschetta

Toasted bruschetta topped with tomato, mozzarella and balsamic


8 slices bruschetta 
2 cups fresh cherry tomatoes, halved
2 small garlic cloves, minced
2 tsp olive oil 
100 ml Balsamic Glaze 
150 g fresh mozzarella crumbled 
Salt and cracked pepper to taste


  1. Preheat oven to 180C.
  2. Slice bread into thin slices and place on a baking sheet. 
  3. Brush the tops of each slice with olive oil and bake for 10 minutes and remove from oven. 
  4. In a bowl, toss together the tomatoes, garlic, olive oil and Balsamic Glaze.
  5. Place the toasted bruschetta on a serving plate—sprinkle with the crumbled mozzarella, then tomatoes and season with salt and cracked pepper.
  6. Serve and enjoy.
